One of my favourite go to breakfast or brunch recipes is my Miso scrambled eggs.
Create your own cafe quality, fluffy, tasty eggs at home with the perfect rich umami flavour thanks to the addition of white Miso paste and our salad sprinkles.
Turn your every day eggs into something quite exquisite.

Ingredients
2 farm fresh eggs
1 Tsp white miso paste
2 TBS cream
Sprouts or micro greeens

1 Tsp OHM salad sprinkles
Salt and pepper
1 TBS butter
Directions
Whisk together eggs, cream, miso paste, salt and pepper
Heat a small non stick pan, add butter and melt.
Add egg mixture and leave for around 20 seconds, then carefully fold the egg mixture around the pan with a spatula.
Tilt the pan back and forth to spread mixture out and continue to gently fold mixture.
Turn heat off when there is still a little liquid left in the pan as the eggs will continue to cook.
Serve with crusty, toasted bread. Add One Hungry Mumma salad sprinkles and sprouts or micro greens and enjoy.
Recipe Note
Be mindful not to overmix your eggs in the pan. You want to fold them to make them nice and light and fluffy.
